I don't know. Superman is still made up of midi-chlorians (the force) which can be manipulated and moved.

A lightsaber with a kryptonite focus crystal (the crystal that gives the lightsaber its shape and color) could probably cut through superman just fine.
Also the Sith do not use red lightsabers exclusively, it just so happens that most of the Sith in the movies had red lightsabers, which has to do with the focus crystal in question being one of the more common yet more powerful focus crystals. Read the books people!

I disagree…
It all comes down to the construction of the light saber.
If the primary crystal and focusing crystals were made out of Kryptonite the emmitted blade would easily cut through superman.
As each jedi must construct their own saber this is possible!!

*sigh* Sabers use electromagnetic radiation, not plasma. v.v Though the reality is this question comes down to which Superman you are trying to cut, of course ignoring the specialized sabers.
Of course though I could entirely see a kryptonite crystal being used to focus the beam of a saber. xD
